2 Ingredient Raspberry Chia Jam
Alright, I’m going to keep this post short and sweet because that’s what this recipe is all about. Jam is a delicious sweet addition to any meal, especially and peanut butter sandwich. There’s something comforting in the savory combination of savory peanut butter and sweet jam. However, jams or jellies tend to get a little sticky *pun intended* when it comes to their health benefits. Fruit is naturally sweet and delicious so why do these food companies need to still add more sugar?! Makes no sense to me.
Now keeping the whole fruit in the jam for natural sweetness is one thing, but making it thick like the usual jam texture is a whole other problem. Enter: Chia seeds. These are nature’s natural “thickeners”. When placed in any liquid, chia seeds start to swell and absorb those liquids to form a gel. That’s why they make such a good binder and egg replacement in a lot of vegan recipes.
So now that we’re super smart about fruit’s natural goodness and chia’s liquid absorbing properties, lets combine them to make jam! I like to use fresh red raspberries but you can use ~1 cup of any fruit. I’ve also make peach chia jam which was really delicious!
I’m confident that once you start making this jam you’ll want to have it ALL THE TIME. If you want a quick snack, or need a little extra fiber and omega 3’s in your life, this chia jam will be there for you! This jam will last for about a week in your refrigerator so feel free to double the recipe if you go through it pretty quick.
