Almond Crusted Chicken
This recipe has been a staple in our household. It’s a recipe that requires minimal prep work and a great way to incorporate more healthy fats into your meal. Almond crusted chicken is a wonderful entree to serve up alongside your favorite vegetables and whole grains. It reheats well so feel free to double the recipe for leftovers later in the week!
Preheat oven to 350°F. Spray a baking pan or glass dish with nonstick cooking spray and set aside. You can also use a silicone baking mat which is my preferred method.
Add almonds, hemp seeds, and garlic powder to a blender or food processor for 30-60 seconds, or until you achieve course crumbs. Place in a shallow dish or plate.
Place beaten eggs in a separate shallow dish.
Coat chicken with egg, then coat with almond/hemp crumbs.
Place chicken on a baking sheet and repeat with remaining chicken.
Place chicken in oven for 20 minutes, or until cooked through to an internal temp of 165 degrees.
