Blueberry Overnight Oats
It doesn’t take much time on Pinterest to find hundreds of recipes for overnight oats. If you’ve never heard of them, it’s oatmeal that you prep the night before and the next morning you have a grab-and-go breakfast with no microwave required! With my recipe, you’ll mix all your dry ingredients to have on hand for whenever you want oatmeal the next day (or immediately if you want hot oatmeal!).
One problem I see a lot with oatmeal recipes is they’re pretty heavy on the carbs with all the oats, honey, yogurt, milk, and fruit and lacking in protein and healthy fats. Protein and fat is really important in the morning for satiety *aka not being hungry in two hours* and minimizing insulin spikes. That’s why my recipe includes healthy fats and protein like hemp seeds, chia seeds, flax seeds, and collagen powder.
All of the seeds in this recipe are easy to find at most grocery stores and I purchase my collagen powder online (Click here for my favorite). Just make sure you are purchasing a good quality collagen powder from grass-fed beef to reap the full benefits. Don’t worry! Your oatmeal won’t taste like beef!
Collagen powder may seem like a new trendy health food, but it’s actually been around for hundreds of years! Our ancestors consumed collagen when they use the whole animal for food: skin, tendons, connective tissue, and bone broth. In our modern food supply, collagen is very limited which is unfortunate because there are so many benefits!
So what does collagen do for our bodies? Well, collagen is a protein and helps provide structure to our connective tissues, skin, and lining of our digestive tract. So if you’re experiencing sagging skin, aching joints, or leaky gut, you may need some more collagen in your life!
Combine first six ingredients in a large, tightly sealed container. Shake container to combine.
The night before you eat your oats, scoop out approximately ½ cup of oat mixture and top with 1 cup frozen blueberries, and 1 cup milk. Stir and place in refrigerator for at least 3 hours or overnight.
The next morning when you’re ready for breakfast, stir your oats and eat cold or microwave for 2-3 minutes.
