Classic No Bake Energy Bites

Oh delicious granola bars….. They’re convenient and easy to grab on the run, but sometimes have questionable ingredients. The biggest culprit is usually the sugar content .

 

To get around this you can make your own granola bars at home. This is actually easier than it sounds! This recipe for no bake energy bites is easy to whip up in minutes and will last you for an entire week for a sweet and nutritious end to a  meal or hearty snack.

The recipe below is a great base recipe to use as you start to customize your own bites to your family’s preferences. I know there’s lots of no-bake energy balls out on the internet right now but I prefer the bar version only because they’re easier to prep instead of spending an extra 15 minutes rolling the dough into a ball.

 

I press the entire recipe into a pan and pop it in the refrigerator to cut up later. Let’s be honest there’s not going to be a huge taste difference between these no-bake bites cut into squares versus rolled into balls.

 1 cup Honey
 1 cup Peanut butter or almond butter
 1 tsp Vanilla extract
 2 cups Rolled oats
 2 cups Rice cereal
 1 tsp Salt
 4 tbsp Chia seeds
 2 tbsp Flax seeds, ground
 2 tbsp Hemp seeds
 1 cup Dried cranberries
 ½ cup Mini chocolate chips

1

Mix first 3 ingredients together in a large, microwave safe bowl. Heat in microwave in 30 second intervals until completely melted.

Add the rest of the ingredients to the bowl and mix until thoroughly combined. You may need to add more peanut butter and/or honey if your mixture is too dry. You should be able to gently squeeze some of the mixture in your hand and have it stick together.

Press mixture into a square 8 x 8 or 9 x 9 pan. You can line the pan with wax paper if you want to save on clean up time later.

Refrigerate for at least 1 hour but longer is better.

Cut into ~2 inch squares. Store in the refrigerator until ready to eat.
