“Miracle Noodles, or Shirataki pasta, has been known for its health benefits for 2000 years in China and Japan. Shirataki is made from the root of a plant called the Konnyaku Imo. Shirataki is made only from the soluble fiber of the plant, as such it only contains a healthy soluble fiber known as glucomannan. Since it is only made of soluble fiber, it is remarkably low in calories. Miracle Noodles absorb the flavors of any sauce or dish you prepare.”1

Pros:
- They’re filling – The serving size of these noodles are only ⅓ of the very small package which made me very skeptical. However, once I paired my noodles with a source of protein and vegetables they were actually really filling! They paired nicely with my Honey Sriracha Meatballs!
- Zero carbohydrates per serving – If you are working to decrease your intake of carbs you’ve hit a goldmine with this product! Since this product is pure water and fiber, there are virtually no absorbable carbs which won’t raise your blood sugar.
- Quick to fix – Most pastas take about 20 minutes or more to boil the water and cook the pasta. If you are making rice, it can take up to 1 hour total (depending on the type of rice you use and quantity). With Miracle Noodles and Miracle Rice, the total package to plate time is only about 10 minutes! That can make your meal prep time a lot quicker when you’re not waiting on pasta or rice to boil. Also, it doesn’t boil over when you get distracted…..*hangs head in shame*
Cons:
- Texture – If you’re expecting to trick your family or taste buds into thinking this is real pasta, you’ll probably be disappointed. I compare this product to a cauliflower pizza crust: it tastes pretty good and I’d eat it again but I’m not going to tell you it tastes just like the original. The texture of these noodles are a little slimy and rubbery which was off-putting at first, but since you’re eating such a small volume of noodles, it blends fairly well with the rest of the meal.
- Hard to find – In every product review, l always include how easy it is to find the product. In this case, it won’t be easy for most people. As I stated above, you will not find Miracle Noodles at any major grocery stores yet. If you’re already in the habit of purchasing items off Thrive Market or Amazon this may not be such a big deal.
- Questionable fiber content claims – According to the package, these noodles are purely water and <1 gram of soluble fiber (from konjac flour). However, on Miracle Noodles’ website, there are multiple claims that their product can help you lose weight and regulate blood sugar due to the fiber content. I believe this is a misleading claim since this product is 97% water and contains only a minimal amount of fiber. Their research that showed improvements in weight and blood sugar were likely due to study participants reducing calories and carbs, not the increase in fiber from Miracle Noodles. Side rant: it’s very frustrating when you have to go between the product website and packaging to figure out what this food even is, let alone if it’s good for you!
Final Verdict:
These noodles are not my favorite but I’m willing to try them again. In particular the Miracle Rice. Even though the noodles are hard to find, I think there’s great potential. I love how quick they are to cook and surprisingly filling for a small volume. A great opportunity to practice intuitive eating! In the future, I would like to try the Miracle Rice as a replacement for oatmeal in my Blueberry Overnight Oats recipe.
