Pumpkin Spice Latte

Pumpkin Spice Latte

September 20, 2018 In Beverages Desserts

With fall right around the corner, I wanted to share with you my version of a pumpkin spice latte! I’m a fan of pretty much everything pumpkin spice EXCEPT the wildly popular pumpkin spice latte from Starbucks. It never really tasted like pumpkin to me! So I decided to make my own and experimented with a lot of different recipes to create my own version.

Depending on what your dietary needs, this recipe can easily be modified to fit your preferences.

For example:

Swap cow’s milk for nondairy milk

Want a different sweetener? Swap the truvia for white sugar, brown sugar, honey, maple syrup, monk fruit, or erythritol. When I’m craving something sweet with REAL sugar, I’ll make my latte with 1 Tbsp brown sugar.  You can also purchase liquid vanilla stevia for extra flavor.

Want more protein? I sometimes add collagen powder in my blender cup while the coffee is brewing. This adds an extra 7-10 g protein with no additional taste. If you want to learn a little more about collagen (and find an additional recipe!), head over to my Blueberry Overnight Oats post.
