Chicken and Spinach Meatballs

 1 lb Ground chicken (may sub ground beef or turkey)
 2 Large handfuls of fresh spinach, finely chopped
 2 tbsp Almond flour
 3 tbsp Tessamae’s Ranch Dressing or similar dressing
 1 tsp Garlic powder
 2 tsp Italian seasoning
 ½ tsp Salt

Preheat oven to 375 degrees. Line a baking sheet with parchment paper or silicone baking mat.

In a large bowl, combine all ingredients. Mix well. I find it easiest to use my hands for this.

Using a 1-1.5 Tbsp cookie scoop or spoon, form meatballs. Approximately 16 total.

Bake for 13-15 minutes.
