Freezer Friendly Breakfast Burritos

Yields8 Servings

 8 Tortillas (approximately 8 inches across)
 12 Eggs
 1 lb Ground pork sausage
 1.25 cups Shredded cheddar cheese
 Optional: peppers, onions, spinach, beans, salsa, or other vegetables

Tear off 8 pieces of wax paper (approximately 8 inches long) and lay them out individually on the counter or kitchen table.

Place a tortilla onto each of the pieces of wax paper.

Cook pork sausage and vegetables of your choosing in a skillet over medium heat until the sausage is no longer pink. Remove from the pan onto a plate lined with a paper towel to drain off extra grease.

Add the eggs to the same pan you used for the sausage/vegetables and scramble until fully cooked.

Once eggs are cooked, add the sausage/vegetables back into the pan and remove from heat.

Divide egg/sausage/vegetable mixture among the 8 tortillas.

Divide shredded cheese among tortillas.

Roll up tortillas, tucking in the sides so the filling doesn’t fall out.

Roll up in the wax paper and cool in the fridge overnight. Then place in the freezer if you want to keep them longer than 1 week.

To reheat, place frozen burrito wrapped in wax paper in the microwave for 45 seconds. Flip burrito over and heat for another 45 seconds. Allow to cool for 1-2 minutes prior to eating.
