Quinoa Pizza Bites

 1 cup Uncooked Quinoa
 2 Eggs
 1 tsp Onion powder
 2 tsp Garlic, minced
 2 tbsp Basil, dried
 2 tsp Oregano, dried
 3 oz Uncured pepperoni, finely chopped
 Pinch of salt
 Pizza sauce for dipping

Preheat oven to 350 degrees.

Cook quinoa according to package directions.

While quinoa is cooking, combine eggs, onion powder, mozzarella, garlic, basil, oregano, pepperoni, and salt in a large bowl.

When quinoa is done cooking, add to egg, cheese, and spice mixture.

Spoon quinoa mixture into silicone muffin tin. ¾ full.

Bake for 30 minutes or until quinoa bites are lightly golden brown.

Allow to cool for 5 minutes before running a spoon around the outside edge of the silicone molds and removing the quinoa bites.

Serve with pizza sauce for dipping.
