Southwest Chicken Salad

Ever wonder if the ingredients in your homemade or store bought chicken salad are all that healthy for you? 

Then check out my recipe below for my Southwest Chicken Salad! It uses my favorite, healthy mayo from Primal Kitchens: Chipotle Lime Mayo. Avocado oil and cage-free eggs make up the base of this mayo so you know you’re getting healthy fats into your diet instead of a bunch of preservatives and heavily processed oils. 

Full Ingredient List for Primal Kitchens Chipotle Lime Mayo:

Avocado Oil, Organic Eggs, Organic Egg Yolks, Organic Vinegar, Water, Sea Salt, Organic Lime Juice Concentrate, Chipotle Powder, Lime Granules, Organic Garlic Powder, Organic Rosemary Extract.

The one issue I have with this mayo is the price. It runs about $8-10 for a 12 oz jar. Now this isn’t usually a problem for me because I’m not a huge fan of mayo. You won’t find me spreading in on everything or mixing it into every recipe. However, I still want that $10 jar of mayo to last as long as possible! 

That’s where the plain, whole milk Greek yogurt comes in. It gives the chicken salad a creamy texture without using all mayo. Plus it gives this recipe an extra dose of protein. 

This recipe is perfect if you like to meal prep at the beginning of the week or if you just want a quick entree you can throw together to use up some extra chicken. Serve on a sandwich or over a bed of greens to add some extra veggies to your life!

 2 Chicken breasts, cooked and shredded
 1 cup Plain, whole milk, Greek yogurt
 ½ cup Primal Kitchen chipotle lime avocado oil mayo
 ½ Lime, juiced
 ½ cup Walnuts, chopped
 1 Bell pepper, diced
 1 tsp Sea salt

Combine all ingredients in a large bowl.

Refrigerate until chilled.

Serve on a sandwich or over a bed of salad greens of your choice.
