If I’m being honest, I typically hate the word “superfood”. It’s typically used as a marketing term for new and trendy foods that are often unnecessary, like goji berries and acai. In my opinion, a superfood can be anything that provides you with important vitamins and minerals that our body needs!
So for my “superfood” bark I’ll share with you what I like to put in my bark, but if you have other superfoods on hand, feel free to create your own based on what you have on hand.
Some other add-ins include:
Almond
Pecans
Cashews
Peanuts
Pistachios
Macadamia nuts
Flax seed
Chia seed
Sesame seeds
Dried cranberries
Dried blueberries
Freeze dried strawberries
Crystalized ginger
As you’ll see below, this recipe takes 10 minutes or less to prep, so it’s really the perfect healthy treat to take to office parties, holiday gatherings, or just for a healthy treat at home!
Clean up was a breeze since I used my silicone baking mat! I use this mat on a weekly basis to make sure nothing sticks to my pan and I don’t have to keep buying parchment paper, wax paper, or aluminum foil. It’s a huge lifesaver if you’re wanting to be less wasteful in the new year and invest in products that you can use time and time again.

Melt chocolate and coconut oil in a glass bowl in a microwave for 15-30 seconds at a time until melted. Stir every 30 seconds and be careful not to burn.
Pour melted chocolate onto a baking sheet lined with parchment paper or wax paper. Spread to approximately ¼ inch thick.
Sprinkle toppings of choice over the chocolate.
Place in refrigerator or freezer until set. Break into chunks of various sizes. Store in refrigerator since these will begin to soften at room temperature.

Extra Tip: If you want to make this an individual treat, you can make a round dollop of dark chocolate on the parchment paper, then place your toppings on the individual chocolate rounds. Or use my new favorite kitchen tool, silicone muffin liners, to make this treat perfectly round and bite-sized!
