Turkey Pumpkin Chili

A fabulous recipe to get you in the mood for fall! 

Also helpful if you have a partial can of pumpkin left if your refrigerator from making my homemade Pumpkin Spice Latte.

Yields5 Servings

 1 tbsp Olive oil
 ½ Onion, finely chopped
 1 lb ground turkey
 4 Garlic cloves, minced
 1 cup Pumpkin puree
 15 oz can Petite diced tomatoes, juices included
 32 fl oz Vegetable broth
 15 oz can Black beans, rinsed and drained
 15 oz can garbanzo beans, rinsed and drained
 1 tbsp Cumin
 2 tbsp Chili powder
 Salt and pepper to taste

In a large pot over medium heat, cook onion and ground turkey until turkey is no longer pink.

Add minced garlic and cook for 1 minute.

Add remaining ingredients to the pot and bring to a boil over medium-high heat.

Reduce heat to low, cover, and allow to simmer for 20 minutes.

Enjoy garnished with green onions, avocado, or a dollop of plain, whole milk greek yogurt.
